An Israeli startup has created a genetically engineered potato with triple the protein of regular varieties, offering the same taste and texture but supplying a significant portion of daily protein needs — even in chip form.

The parasite’s ability to penetrate the human brain and survive in a dormant state without reproducing made it a perfect candidate for the researchers’ novel approach.
